Ingredients:
- 250g flour
- 120ml water
- 1 teaspoon salt
- 2 tbsp olive oil
- 200g crème fraîche or sour cream
- 1 large onion, cut into thin rings
- 200g bacon cubes
- Salt and pepper, to taste
- A pinch of nutmeg
- Fresh chives or parsley, to garnish
Instructions:
- Prepare the dough:
- In a large bowl, mix the flour with the salt. Add the water and olive oil and knead into a smooth dough. Leave the dough to rest in a warm place for about 30 minutes.
- Preheat the oven:
- Preheat the oven to 250°C. Line a baking tray with baking paper or use a pizza stone.
- Roll out the dough:
- Roll out the dough very thinly on a lightly floured work surface. Place the rolled-out dough on the prepared baking tray.
- Prepare the topping:
- Spread the crème fraîche or sour cream evenly over the dough. Season with salt, pepper and a pinch of nutmeg.
- Spread the onion rings evenly on top and then sprinkle over the diced bacon.
- Baking:
- Bake the tarte flambée in the preheated oven for about 10-15 minutes until the edges are crispy and golden brown.
- Serve:
- Remove the tarte flambée from the oven and immediately sprinkle with fresh chives or parsley. Serve warm.
Tips:
- For a vegetarian version, you can omit the bacon and use thinly sliced mushrooms or roasted vegetables instead.
- A squeeze of lemon juice on the finished tarte flambée adds a fresh touch.
