Red pesto

Unlike green pesto, red pesto is somewhat less popular. This mixture of sun-dried tomatoes and parmesan cheese, among others, is characterized by its bright red color. The taste is not comparable to the taste of green pesto. You can easily make red pesto yourself by blending all the ingredients in a blender. In no time you will have made a delicious pesto for a pasta, on bread or as a dressing through your salad.

Ingredients

  • 100 grams sun-dried tomatoes from a jar
  • 20 grams roasted pine nuts
  • 20 grams Grana Padano
  • 1 clove garlic
  • 1 handful of fresh basil
  • 0.5 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 3 tbsp. liquid of the sun-dried tomatoes
  • pinch of black pepper
  • pinch of salt

Prepare

  1. Preparation

    Drain the sun-dried tomatoes well in a colander or on kitchen paper

  2. Toasting pine nuts

    Put a skillet on high heat and add the pine nuts. Toast the pine nuts for 2 to 3 minutes until browned.

  3. Blending

    Start by grating the Grana Padano and roughly dicing the garlic. Put the grated Grana Padano, basil, toasted pine nuts and garlic in the blender. Mix all the ingredients together and then add the lemon juice and olive oil. Turn the blender on again and stop when you have the desired substance.

  4. Taste

    Time to taste your homemade red pesto! If you are missing some flavor, add black pepper and salt to the pesto. You can thicken the pesto by adding extra cheese to the mixture. If you want to make a thinner pesto you can add olive oil.
