Ingredients:

  • 250g flour
  • 120ml water
  • 1 teaspoon salt
  • 2 tbsp olive oil
  • 200g crème fraîche or sour cream
  • 1 large onion, cut into thin rings
  • 200g bacon cubes
  • Salt and pepper, to taste
  • A pinch of nutmeg
  • Fresh chives or parsley, to garnish

Instructions:

  1. Prepare the dough:
    • In a large bowl, mix the flour with the salt. Add the water and olive oil and knead into a smooth dough. Leave the dough to rest in a warm place for about 30 minutes.
  2. Preheat the oven:
    • Preheat the oven to 250°C. Line a baking tray with baking paper or use a pizza stone.
  3. Roll out the dough:
    • Roll out the dough very thinly on a lightly floured work surface. Place the rolled-out dough on the prepared baking tray.
  4. Prepare the topping:
    • Spread the crème fraîche or sour cream evenly over the dough. Season with salt, pepper and a pinch of nutmeg.
    • Spread the onion rings evenly on top and then sprinkle over the diced bacon.
  5. Baking:
    • Bake the tarte flambée in the preheated oven for about 10-15 minutes until the edges are crispy and golden brown.
  6. Serve:
    • Remove the tarte flambée from the oven and immediately sprinkle with fresh chives or parsley. Serve warm.

Tips:

  • For a vegetarian version, you can omit the bacon and use thinly sliced mushrooms or roasted vegetables instead.
  • A squeeze of lemon juice on the finished tarte flambée adds a fresh touch.
